All the glitz and glamour of the dolce vita days of Rome in the 1950s
lives on in this overdecorated but superb downstairs sanctuary of gourmet
delights. Service is literally fit for a king--and the Sans Souci has
had a few among its customers, along with Hollywood biggies and business
magnates. It is the only restaurant in Rome with a doorman, but don't
let that intimidate you, for the staff is courteous and attentive. The
menu presents both French and Italian dishes, among them truffled terrine
de foie gras and agnello al timo (roast lamb with thyme). Reservations
essential. Jacket and tie.

Not far from Piazza Barberini, this unassuming trattoria offers exceptionally
good food. Behind an opaque glass facade are a couple of plain dining
rooms, where you are served light homemade pastas, a special chicken
broth, and meats ranging from boiled beef to giambonetto di vitella
(roast veal) and cotoletta alla bolognese (veal cutlet with cheese and
tomato sauce). Family-run, it's quiet and soothing--a good place to
rest after a sightseeing stint. Service is cordial and discreet.

Near Via Veneto, Mariano (who is actually Tonino, Mariano's son-in-law
and successor) is an exponent of quality and tradition. Since he leaves
flights of culinary fancy to others, you can be sure of finding authentic
Roman and central-Italian cuisine here, including delicate egg pastas,
game, and abbacchio in season.

This Tuscan trattoria off Via Veneto and Piazza Barberini opened in
the dolce vita days of the 1950s, when this area was the center of Roman
chic and bohemian life. It soon acquired a faithful clientele of politicians,
journalists, and artists, and it has changed little over the years.
Decor and menu are simple. The latter offers typically Tuscan pasta
e fagioli (with beans), grilled steaks and chops, and fagioli all'uccelletto
(with tomato and sage). Reservations essential.
